Chicken Parmi’s

Who does not love a good Chicken Parmi, this one is pretty simple, but I do make mine with a twist, I do not use ham I use bacon pieces.

Ingredients

1 or 2 Chicken Breasts

2 to 3 Cups of Oil (Your choice, I use Canola)

2 Eggs

2 to 3 Cups Cheese (I use extra bitey)
(depends on how many schnities you are making)

2 to 3 Cups of Bacon pieces 
(depends on how many schnities you are making)

3 tsp Italian Herb Mix

2 tspn Garlic Cloves minced

1/2 Onion finely chopped

1/2 tspn Salt

2 tspn Black Pepper

1 Jar Tomato’s (I use the one pictured below)

1/2 Cup Chicken Stock

Cup or Two of Plain Flour

Cup or Two of Panko Crumbs

Fresh Parsley for garnish

Instructions

  1. Cut the chicken breats into halves length ways and then use a meat mallet and flatten them out.
  2. Sprinkle a light amount of the Black Pepper and Italian Mix over both sides of the chicken breasts, this should leave you  and place in fridge for 30 minutes.
  3. In a bowl add your 2 eggs, 1 tspn Garlic and 1 tspn of Italian Mix and whisk away until you have combined all the egg so its nice a mixed.

4. Place your flower on one plate and your crumbs on another, I usually crush the panko crumbs into smaller pieces, you can do that any means you like, I sometimes just use a tablespoon and crush them in the plate I have put them in. One by one dip your chicken breasts into the egg mix and then into the flower and press down to coat well both sides, then into the crumbs doing both sides to coat the chicken well in crumbs. Place your crumbed chicken on a plate.

See step 6 + 7 before you go to Step 5.

 

5. Using a fry pan on medium to high add your oil, once the oil is hot add your chicken 1 piece at a time, turn once the crumbs start to go brown, do not over cook here, its literally like a minute to a minute and a half each side, once the piece is done either side place on a cooling rack to allow the oil to drain off and do the next piece.

 

6. In a small pan add a dash of oil and your bacon pieces and let that cook until the bacon is pretty much cooked, it should only take a few minutes you can do step 7 at the same time

7. Making the sauce here, you can do this after step 5 but it is just as easy to do step 5 and 6 as youo do step 7at the same time, in a pan add 1tspn Garlic a dash of oil and your chopped onion, sate until the onion is slightly cooked then add in your tin or jar of tomato base, bring to a boil and then let simmer for a couple of minutes.

8. Place your chicken schnitzels onto a pan, I usually place alfoil on the pan, then your schnitzel, pour your sauce on top, cover with your bacon pieces and cover with cheese, then place into an oven on 180c for 10 minutes. 

Once done you can sprinkle a little chopped parsley over it for presentation and serve with a salad or whatever you like.
